  • 1 teaspoon of Bittern (Nigari)


  • Soy sauce

  1. Pour pure soy milk into a pot
  2. Boil and evaporate it to 50%
  3. Pour it into a cup and cool it to 41F°(5C°) in ice water
  4. Add the bittern to the cup and simmer it for 8 minutes
  5. Cool it to 41F°(5C°) in ice water
  6. Add toppings onto the tofu
