Ingredients (for 1 person)

  • 3.7 ounces (105g) of Soba noodles

<Topping>

  • Cut green onion
  • 3 ounces (90g) of Japanese white radish
  • 1 ounce (25g) fried tempura batter
  • Two shrimp tempuras

<broth>

  • 3 tablespoons of mentsuyu (*Pour it under soba)
  • 3 ounces (90ml) of water
  • Wasabi (as desired)
  • 1 tablespoons of mentsuyu (*Pour it over the top)

Recipe

  1. Cut the green onion
  2. Grate Japanese white radish as desired
  3. Boil Soba noodles with plenty of water for 5 minutes
  4. Wash soba noodles with tap water and put  into ice water  *
  5. Put 3 tablespoons of mentsuyu and water into a dish
  6. Add wasabi and mix
  7. Add soba noodles and mix
  8. Add toppings onto the soba noodles
  9. Pour mentsuyu over the top

*The reason for putting the noodles into ice water is to create good texture in the noodles
